Ingredients

Smoked Salmon Fillet 800g (approx.)

2 tbsp Olive oil

1 tbsp Lemon juice

2 tbsp Mint roughly chopped

1 Garlic clove finely chopped

1 tsp Honey

1 Small red onion, thinly sliced

2 tbsp Italian parsley

1 Pomegranate, seeds removed

 

Directions

  1. Combine the oil, lemon juice, garlic, mint & honey in a large bowl and season. Toss in the red onion and set aside to marinate for 10 minutes. Then toss in the Italian parsley and pomegranate.
  2. Lay your Smoked salmon fillet out on a large platter and top with the herb and pomegranate salad.
